This is a new blog.

I've been blogging for several years now about adopting from foster care, and trauma. Our family journey can be found on that blog. I love to find freebies and deals.

And I love to share our blessings, whatever those are.

I also love to cook. 

And Mr. Boy, our son, has begun to show a small bit of interest in cooking. So this first recipe will be a simple recipe that a child can assist with. It's yummy.  We call it Mini Tacos.  We adapted a variation of the recipe from Food.com, which is a great site, with wonderful recipes.  Food.com is an awesome time-saver once you have your personal cookbooks set up and need a grocery list.  I've been a member for over 10 years now, and joined back when it was Recipezaar.  Here's our recipe, which I made last night, much to our son's delight:


Mini Tacos


1 lb hamburger meat (we use 93% lean)
1 bottle salsa, your favorite brand
1 pkg of taco seasoning (or if you are like me, 1/4 cup of your homemade mix)
1 pkg of wonton wrappers (the square ones, in the produce dept)
Grated cheddar to taste
Sour cream, black olives, etc for topping


Preheat oven to 425 degrees.  Using a mini muffin pan (we use a non-stick one), line each hole with the wonton wrappers.  (This recipe will make approximately 30 mini tacos.)  Gently push wonton down into the hole at the center of the square, gently, trying not to tear.   The tops will stick out and overlap one another, and there will be folds in the wrappers.  Spray with Pam.  Put in the oven for 5-8 minutes, until the edges of the wrappers just begin to brown.  Remove from oven, put aside (leave in pan).


Brown and drain ground beef.  Add taco seasoning and water called for on pkg.  Add 1/4 cup of salsa.  Cook for 10 minutes, or until most of the liquid is gone.  By the spoonfuls, put beef mixture in the wonton cups.  Top each with a tsp or less of salsa.  Top this with grated cheddar.  Put back in oven for 5-10 minutes, or until cheese is bubbling.


Serve with Mexican rice or beans, and veggie or salad.  Top with olives/sour cream/etc, your choices.  Doesn't it look yummy?  Enjoy!!
